Hearty Chili with an Italian Twist
1 lb. bulk Italian Sausage
1 lb. lean ground beef
2 c. onions, sliced
2 c. red bell peppers, sliced
2 c. green bell peppers, sliced
5 cloves garlic, minced
2 c. green cabbage, shredded
2 (15 oz.) cans light or dark red kidney beans
2 (15 oz.) cans tomatoes, diced, undrained
1 (9-10 oz) can tomatoes with green chilies, diced, undrained
1 tbsp. fresh parsley, chopped
2 tbsp. dried oregano
1 tsp salt
1 tsp dried basil
1 bay leaf
1 c. (4 oz.) Mozzarella Cheese, shredded

In 5 quart Dutch oven, brown sausage and beef; drain on a paper towel. Cook onions and bell peppers in Dutch oven until tender, about 8 min. Add garlic, cook 2 min. Add browned meat, cabbage, 1 can beans and stir into chili with seasonings; heat and simmer, uncovered, 45 min. to develop flavors, stir occasionally. Remove bay leaf. Top each serving with shredded cheese.  Makes nine 1¼ cup servings.
