Spinach-Cheese Bagel Bites
4 day-old bagels
4 oz. (4 c.) fresh spinach, stems removed
1 c. provolone, shredded
1/3 c. onion, minced
¼ tsp. salt
¼ tsp. pepper
¼ tsp. ground nutmeg
Preheat oven to 375° F. Split bagels horizontally. Use a grapefruit spoon to hollow-out some of the bread from the bagel .Place spinach in a microwave safe bowl and splash with water. Wilt the spinach by cooking in microwave on high for about 1 min., 20 seconds. Drain well.
Combine spinach, cheeses and the rest of the ingredients, except the bagels. Place bagels on a foil-lined cookie sheet and place about a ¼ c. of the mixture on each bagel. Bake each bagel until the cheese melts and the edges of the bagels are slightly toasted, about 8-10 min. Makes 32 pieces, or about 8 servings.
